Raspberry Margarita
A fruity twist on my favourite margarita, I love the vibrancy of this cocktail. Go for British raspberries if you can and always choose Maldon sea salt.
Ingredients

1 cup of fresh raspberries (plus extra to garnish)
100ml fresh lime juice
100ml tequila
60 ml Cointreau
Maldon sea salt
Fresh lime wedges
Method
Prepare your tumblers by running a wedge of lime around the rim of the glasses. Pour a tablespoon of Maldon sea salt onto a plate and gently roll the rims into it to create a salty coating. Then fill the tumblers with ice.
To make the margaritas, place the raspberries into your cocktail shaker and gentle crush using a pestle, end of a rolling pin or back of a spoon. Then fill the cocktail shaker with ice and add the lime juice, tequila and Cointreau. Shake well and strain through a sieve into tumblers. Garnish with a raspberry and fresh lime wedge if you like.
If you do not have a cocktail shaker, you can use a jam jar.
