Filo Baked Feta With Tahini, Honey & Fresh Figs

I first tried this at a fabulous beach restaurant on a tiny Greek island called Lipsi. Feta is eaten at almost every Greek meal and this warm version is utterly delicious. The salty creamy cheese is wonderful against sweet honey and creamy tahini and filo gives it a gorgeous crunch.

INGREDIENTS

| Serves 2-4 |

  • 1 sheet filo pastry

  • 200g block of feta cheese

  • Olive oil

  • About a tbsp of good quality tahini (I love @belazu_co)

  • 1 tsp (or more) runny honey

  • A good pinch of toasted sesame seeds

  • 2-3 fresh figs

METHOD

  • Preheat your oven to 180 degrees fan setting.

  • Using a pastry brush (or clean paint brush) paint the sheet of filo pastry completely with olive oil.

  • Place the feta at the bottom of the filo and fold the filo over to wrap the feta. Then fold it over again to create a parcel.

  • Paint the filo over again with olive oil and place, fold side down, onto a baking tray.

  • Bake for 20 mins until crisp and golden.

  • Transfer onto a serving plate using a spatula. Drizzle with the tahini and honey and sprinkle over the sesame seeds.

  • Chop the figs and arrange alongside.

  • Serve the filo baked feta wam.

  • Enjoy!
