Fluffy Banana Pancakes with Caramelised Banana
A very good recipe for the weekend, these banana pancakes always go down with great success. Sub for gluten-free flour if you like. I have tested them this way and the result is equally delicious.
Ingredients
| Makes 6 pancakes |
250ml oat milk
1 tsp lemon juice
1 egg
1 tbsp melted butter, cooled slightly (or veg oil)
1 tsp vanilla extract
1 tbsp maple syrup
1 small ripe banana, mashed
150g plain flour
1/2 tablespoon baking powder
1/2 teaspoon baking soda
Pinch of salt
For the caramelised banana
1 banana, sliced or halved
1 tbsp granulated sugar
1 tsp butter
Method
Whisk the oat milk, lemon juice, egg, melted butter, vanilla, maple syrup, and mashed banana in a bowl.
In a separate bowl, whisk the dry ingredients.
Pour the dry ingredients into the wet and mix just until incorporated. Let the batter rest for about 5 minutes.
Heat a non-stick pan to medium heat. Melt a little butter and using a ladle, spoon about 2tbsp of batter into the frying pan. Cook for about 1-2 mins or until bubbles appear, then flip and cook for 1 more minute.
Keep warm whilst you make the caramelised banana.
Coat the sliced banana in the sugar. Melt the butter in a pan, add the banana and cook for about 4 mins on either side until caramelised. Serve the banana pancakes with maple syrup, caramelised bananas, and yogurt if you like.
