Pecan, chocolate, oatmeal cookies

I love the combination of pecans and chocolate and they’re perfect in these crunchy oaty cookies.

Ingredients

  • 170g soft butter

  • 200g light brown soft sugar

  • 1 large egg

  • 1 tsp pure vanilla extract

  • 100g plain flour

  • ½ tsp salt

  • ½ tsp baking powder

  • ½ tsp mixed spice (optional)

  • 250g oats

  • 180g 70% dark chocolate, roughly chopped

  • 120g pecans, chopped

Method

  • Preheat your oven to 180 degrees, fan setting and line two baking trays with parchment paper.

  • In a large bowl beat the soft butter with an electric whisk. Add the light brown soft sugar and beat again.

  • Then add one egg and a tsp of vanilla extract and beat to combine. 

  • In a separate bowl whisk together the flour, salt, baking soda and mixed spice. Add this to your wet mix and beat to combine.

  • Pour in the oats, chopped dark chocolate and chopped pecans. Stir to combine.

  • Use roughly 2tbs of the mix per cookie placing each one 3 inches apart. Bake for 12-14 minutes.

  • The cookies should be golden brown on the edges but slightly soft in the centre. Allow them to cool on the tray for a few minutes before transferring to a wire rack.
