Giant chocolate chunk cookies
Chocolate chip cookies are great but giant chocolate chip cookies are better or at least bigger. I made these for my #diningindishes IGTV series during lockdown and they went down a treat.
INGREDIENTS
250g plain flour
1 tsp bicarbonate of soda
1/2 tsp salt
170g soft butter
150g light brown soft sugar
100g white granulated sugar
1 large egg
1 large egg yolk
1 tsp vanilla extract
250g chopped dark chocolate
METHOD
Preheat your oven to 180 degrees fan and line 3 trays with baking parchment (or I love reusable silicone baking mats).
In a medium sized bowl whisk together the flour, bicarbonate of soda and salt.
In a separate large bowl beat together the butter with the sugars until light and creamy.
Add the egg and egg yolk and the vanilla extract and beat again until combined.
Add the flours and stir to combine with a wooden spoon adding the chopped chocolate about half way through.
Divide the mix into 6 balls and shape and press 2 each onto the trays placing them at least 5 inches apart.
Bake for 20- 25 mins until the cookies have gone golden in colour. They will still be soft in the centre but allow them to cool completely.
