Sesame, Ginger and Peanut Slaw
A crunchy, zingy and nutty slaw that certainly hits the spot if you’re after something fresh. I love to serve this alongside any main and often have it as the star of the show for a midweek lunch.
Ingredients
| Serves 2-4 (as a main or a side) |
100g red cabbage, finely chopped
100g white cabbage, finely chopped
150 carrot, grated
40g toasted sesame seeds
40g roughly chopped peanuts
For the dressing
2 tbsp Tamari or soy sauce
2 tbsp Toasted sesame oil
1 tbsp Mirin or honey
1 tbsp apple cider vinegar
juice of 1/2 a Lime
one garlic clove, crushed
Matchbox size ginger grated
Method
Combine the dry ingredients in a large bowl.
Mix the dressing ingredients together with a fork and pour over.
Toss everything together using your hands and serve.
