Sesame harissa roast carrots with tahini

Bright in colour and bold in flavour this dish is a sure way to bring a smile to the table. The key is to invest in quality harissa and tahini. I like Belazu who take incredible care in sourcing the best of the best. This is delicious slightly warm or cool and makes for wonderful leftovers too.  

Ingredients

  • 2 bunches of carrots (about 800g)

  • 40g harissa (I like Belazu)

  • 30g honey

  • 100g sesame seeds

  • 30g olive oil

  • 1 tbsp apple cider vinegar

  • 1 tsp sea salt.

  • Tahini to drizzle (I like Belazu)

 Method

  • Preheat your oven to 250°C/fan oven.

  • Wash you carrots and slice them in half lengthways and arrange onto two roasting trays.

  • Combine the harissa, honey, sesame seeds, olive oil, cider vinegar and sea salt in a mixing bowl.  Pour it over your carrots and massage to coat using your hands.

  • Roast for 30 mins until cooked and slightly charred. 

  • Arrange onto a serving tray and drizzle with tahini to finish.
